The top if crisp and golden.
While the inside if full of juicy cranberries.
And delicious chopped apple. Look at how big this apple is! I couldn't believe it when I saw it at the farmer's market, so of course I had to buy it.
That whole apple became more than two cups chopped up, so I had a few bits to nibble on while I waited for the bread to finish. Now on to the recipe!
What you'll need:
1 1/2 cups Flour
3/4 cup Sugar
1 1/2 tsp Baking Powder
1/2 tsp Baking Soda
1/2 tsp Salt
1 tsp Ground Cinnamon
2 tbsp Canola Oil
2 Eggs
1 tsp Vanilla Extract
1 cup Fresh or Frozen Cranberries
2 cups Peeled, Chopped Apples
Preheat oven to 350°F.
In a large bowl, combine flour, sugar, baking powder, baking soda, salt and cinnamon.
In a small bowl, whisk oil, eggs and vanilla extract.
Stir wet ingredients into dry ingredients until just moistened. Fold in cranberries and apple.
This is a thick batter, but I promise it will work out!
Pour batter into a loaf pan coated in cooking spray.
Bake for 60-65 minutes or until a toothpick inserted in the center comes out clean.
Cool for 10 minutes on a wire rack. Then remove from pan and let cool completely on wire rack.
Slice and enjoy!
I could eat this for the rest of my life. I even toasted a piece for breakfast one morning and smeared delicious butter all over it. So good as a snack too!
Makes 16 slices.
