In honour of Cinco de Mayo this Wednesday, I am having a Tex Mex week here at SHBS. A celebration of the awesomeness that is Mexican-American food. I have some fun, easy recipes that use real ingredients (i.e. no pre-mixed seasoning packets...real spices, baby, all the way) and a few party ideas too. I'm having some friends over myself for Wednesday night and I'm trying to think of fun ways to spruce the place up for the festivities.

How fantastic does that party look? I can guarantee you that my little shindig will not look that fancy. For lack of a lawn at the very least! I love the tequila cupcakes though.
Which makes me think about these Loco Coco Tequila Cupcakes by Joanne Weir. I want to make these soon. I'm on a real coconut kick these days. Even put it on my oatmeal in the morning. Yummy :)
To kick it off the Tex Mex food worship, here is my favourite Guacamole recipe. I found it years ago in a Super Bowl party section of newspaper at a pizza parlour. Random, I know. But I looked at it, thought it sounded simple and good, so I went for it...and fell in love. I have seriously made this a thousand times since then. My brother actually barters with me for it. As in "I'll do this, if you make me guacamole"...pretty good system if you ask me ;)
What you'll need:
2 ripe Avocados
Juice from 1/2 a Lemon
1 tbsp Chopped Onion (I like Red Onion for the colour)
1/2 tsp Salt
2 tbsp Olive Oil
Cut the avocados into halves, remove the seeds, and scoop out the pulp into a small bowl. Use a fork to mash the avocado. Stir in lemon juice, onion, salt and olive oil. Serve immediately.
